Breakfast Omelette Panini

Breakfast Panini

SERVES: Just 1!
COOKING TIME: About 10 minute
INGREDIENTS: 4 slices of British Applewood smoked premium back bacon, 3 Scrambled eggs, 100g of Grated cheddar cheese, butter or margarine for spreading, 2 slices of Panini bread, salt & black pepper

Method
Place the bacon rashers on a grill pan and cook for 3-4 minutes, until crispy and cooked through. Beat the 3 eggs, adding a dash of black pepper and salt; then add the beaten eggs to a pan and cook for 5 minutes until the omelette is fully cooked. Construct the Panini: On the first layer of Panini, butter the bread and then place bacon rashers on the base. Next add the omelette then sprinkle the grated cheddar cheese over the top. Finally, add the Panini bread to the top and cook in a Panini or contact grill for 3-4 minutes. Remove from the grill and cut in half, serve with a seasonal fruit salad
